Louisiana Shrimp Gumbo


This stew is rich in the flavors of the shrimp and smoked sausage. The okra and a darkened roux give it a thick depth and the dish is finished with rice.

Ingredients
∙ Serves 8
Meat
6 strips 1/2 lb. thick-sliced bacon, thick-sliced
Seafood
3 cups Clam, bottled juice
1 lb Shrimp, medium
Produce
1 tsp Basil, dried
1 cup Celery
1 Celery, leaves
1 tbsp Garlic
3 Jalapeno peppers
1 cup Okra, frozen
1 tsp Oregano, dried
1/2 cup Red bell pepper
1/4 cup Scallions
1 tsp Thyme, dried
1 cup Yellow onion
Canned goods
1 1/2 cups Chicken broth, low-sodium
Condiments
3 tbsp Lemon juice, fresh
1 tbsp Worcestershire sauce
Pasta & grains
1 Brown rice made according to package directions
Baking & spices
1/4 cup All-purpose flour
1 tsp Black pepper
1 tsp Kosher salt
Beer, wine & spirits
2 tbsp Sherry, dry
Other
4-5 oz. of kielbasa sausage sliced then sliced again in half moons (you can also use andouille sausage**)
